*All optional ingredients.  The nut/seed butter makes the pancakes more fluffy.  However, if you omit it, the pancake will be thinner and more like a crepe.  Either way is delicious!


Heat a pan (I use cast iron) on the stove and add the Coconut Oil to melt in the pan

Blend the rest of the ingredients in a blender or just mix it together as well as you can with a fork to make a smooth batter.

In a warm pan, drop ¼ cups full of the batter into the pan and wait until you see bubbles rise through the pancake before flipping one time.  This usually takes 4-5 minutes.  Once you see bubbles form throughout the pancake, flip it once and let it sit for another 2-3 minutes and then remove and serve.

Top with Walnuts, Fresh Fruit, Fresh Whipped Cream, Kefir Cheese, Cream Cheese, Honey and/or Maple Syrup (Grade B is best).
